Food processing induces significant changes to the food matrix, and ultra-processed foods may affect health and performance differently than whole foods of similar macronutrient composition. This course explains the role of the food matrix in whole and ultra-processed foods, and highlights the use of modified macronutrients such as carbohydrate and protein in optimizing human performance.
